Two Payers One Payment
I often have the need to send out a contract with three parties - myself, plus two individuals who together constitute the Client. If I assign both of the individuals as Payers, they both receive an email advising them once the contract is signed by all three of us and payment can be remitted. So far, so good. If one of the two of them makes the payment, what happens when the slower one tries, too? Does their payment go through, as well? I want to prevent a scenario where I'm paid twice, but I want to give either signer the opportunity to be the one to pay. Is that setup possible?

You can assign the payment to multiple recipients:
Once one of the recipients pays, the document is marked as paid. However, there are no notifications if someone else is in the document paying. But if they start at the same time or one right after the other then they would get an error regarding payment - meaning one of the payments would not go through.
If by some chance they both manage to pay at the same time then the sender would need to reimburse one of the payments through the payment partner (Stripe, Square, PayPal, etc).
