Its a HORROR SHOW!
I can't believe I'm going through this much grief to do something so simple. I needed to fill out, sign, and return one simple pdf document that was sent to me as an attachment in an email. The other person doesn't need to do anything other than receive the completed document back once it's done. I was given the option to "Assign All" after uploading the document and proceeded to fill out and sign all the fields. I even found how to change the date format. Then, when it came time to send, I noticed the person who needed to receive the completed document back was CCd (not just send like a normal email). So I go about managing recipients - remove myself and then add myself back - thinking that would change the order and make him get a normal regular email (not CC). Now I see all of the TWENTY - FIVE - FIELDS have been unassigned and there is no "Assign All" option available. I have to go through assign fields twenty five time?? JESUS! And what if they are left unassigned will that screw up just getting the person the signed completed document (I have no idea what leaving the fields unassigned but filled in would do)? Another concern is that this is a business relationship and I don't want to expose any error in the process to the other person - in other words I don't want them to inadvertently be required to fill something out or sign something when that is not what is needed and then have that be an issue in our relationship.
For the love of God and all that is good! This should have taken 5 minutes! What does it take to just fill out a form, sign it, and send it back to the person I got it from?

For others in the same position as the OP, I discovered when you are editing a document, you can multi-select fields with ctrl+click and the context menu offers to Assign All.
For the devs: I noticed a prompt at the top to Assign All but I didn't see it at first. Maybe reword the prompt to clarify?
