How to edit fields that have been populated via variables

I have created a template. I have several variables. 

I am using Zapier to send a payload and then insert the variables into the document. As the variables are in Markdown syntax they have * and other symbols. 

How can i edit those fields once the template is populated? Doesnt seem to support inserting content and then editing the content after the fact.
