Signatures - Draw vs Typed and the ability to alter settings for each signature

I used to be able to have 'Draw' and 'Type' as options on my workspace, AND THEN, when I sent out a document, I could change the properties and turn off 'Type', thus forcing the recipient to DRAW their signature. Unless I am missing it, I no longer see that option. Am I missing it? Did the feature get discontinued? Did the feature move? It's soooo irritating to have to change the workspace settings every time. I feel like changing them per signature on each document is vital. Help!

  Is there a way to set up the document before sending to recipient that way recipient could only draw e-signature?
