Turning Off Approval Workflow

What are the consequences of changing the approval workflow at the template level if another document is still pending approval?

We generate proposals using our PD templates, but the approvers in the workflow may change with each created document.

I'm torn between creating a template with every conceivable approval workflow and being able to change at the template level each time a new document is created. 

Any suggestions would be most appreciated.

  I'm also finding myself in the same problem. Is there a way to set up an approval workflow once you're using a template, rather than setting it up at the template level? Otherwise is there a way to only select specific approvers from the group every time a document is created from the template? Otherwise there will need to be numerous of the same template because different approvers are needed (if that makes sense).

  Now that PD has enabled their Suggesting Edits feature to be at either the document or template levels, I hope this is next.

  This is still a problem that needs to be fixed, one year later.
